Is it correst that you can purchase more than one elite skill but only have one in your set of 8 at a time? Or is it the case that you can only know one elite skill/spell period?

Correct. You can learn all the elite skills avaiable to your professions, but only have in your bar at a time.

You can learn all the elite skills for both your professions, but you can only carry one in your skill bar at any given time.
